For me it would be Opeth. I've been listening to them for almost 10 years now and I've seen them live 5 times so they are easily one of my favourite bands. I'd pick them as the band I would listen to because of the range of material they have released over their career. Or Pantera, simply the best metal band there ever has been. God I loved Sebastian Bach growing up. Had posters of him on my wall I would listen to Johann Sebastian Bach. Prelude 1 being my favourite.
