Because of the salary cap rules players generally become too expensive to keep and that's when proven veterans are shipped on. Trades usually involve draft picks as compensation and yes the Chiefs will pick last in each round of the upcoming draft (barring trades). The price of that trade would be many, many draft picks (I'm struggling to see what could be offered that Kansas would accept though as he's irreplaceable). Yeah, Super Bowl champs pick last and the team with the worst record pick first, which should allow them to pick the best player available. However it's hard to scout players in college and picking first doesn't always mean you'll get the best player. Mahomes I think was something like 15th drafted by KC.
