It's just uses Bluetooth link to other app users' Bluetooth to detect "contact". 

There is always the possibility that they're completely lying and your location is being tracked...

They might mean they are not keeping a record of your location but it must be able to tell where you have been.

It knows you've been in the place you checked in at anyway.

 

That's about it as far as the location services go. It can't possibly trace where you are after you leave as far as I can see unless it manages to harvest your Apple ID settings and follows you about in a Findmyphone capacity.
