looksgoodinred Posted January 4, 2013 Author Share Posted January 4, 2013 lots of leftover gingersnaps from Christmas. with a bit of butter and sugar, turned them into cheesecake crusts. cream cheese, whipped cream, sugar and vanilla as the filling. a few bits of crystalized ginger on top. mini cheesecakes. job done. Hahaha (edit: forgot it's the silver spoon) Anyways your gingersnap cheese cakes look really nice. Prefer little crisp things like that lately with a bit of crunch an nice flavors. Sounds weird but lately like taking a part cooked baguette and slicing it thin and making little toasts from it (cheap and easy). Obviously with good with a bit of olive oil/garlic, minced olives, mini bruschetta or smoked salmon and dill etc but see when I have scrambled eggs now prefer a mount of eggs (often with smoked sausage through it and cheese) and loads of little toasts plus a dunt of butter then scoop on butter/eggs. Thinner bread plus it doesn't soak in. Link to comment

Thinner bread plus it doesn't soak in. not weird at all. i do that with any leftover baguette and toast trays of them in the oven with olive oil and a bit of salt. sometimes shards of parm. great for dipping in humus and salsas. Just ignore the sprinkly bits in the last pic, just a bit of dandruff. Normally expensive (£4+) for one steak but it is pretty good* and cos they are that expensive tend be loads in the reduced bit (things matured for 28 days I'm sure one or two more won't hurt it haha).
